Vegetable soup
"Delicious fast and easy home made soup"

Ingredients
(makes 4 portions)
300g Mixed Vegetables (onion, carrot, turnip, leek and celery)
50g Butter or Margarine
25g Flour (white or wholemeal)
1 litre of Vegetable Stock
100g Potatoes
Bouquet Garni
Salt and Pepper
Croutons
Sliced bread
Butter
Instructions
- Peel, wash and slice all vegetables except the potatoes.
- Cook gently in the butter or margarine in a covered pan, without colouring.
- Mix in the flour and cook slowly for a few minutes without colouring; cool slightly.
- Mix in the stock. Stir and bring to the boil.
- Add the sliced potatoes, bouquet garni and season. Simmer for 30 to 45 minutes: skim when necessary. Remove the bouquet garni.
- Liquidise or pass through a sieve and then through a medium strainer.
- Return to a clean pan and reboil: correct the seasoning and the consistency.
- Serve with croutons and sliced bread separately.
